It is a comparative reconstitution for the whole of traditional techniques in the extraction of olive oil, and raisin juice in Lebanon. My research is based on two elements: the memory of the inhabitants of villages, and their linguistic expressions. Technical data was observed in many villages, and in archeological sites. In my study, I have focused on a technique called: “Matruf”. The “Matruf”, is a traditional technique that no longer exists, for the extraction of olive oil, and on which, I have already realized an “archae-ethnographic” study.
